INGREDIENTS:
- 100g butter
- 80g rolled oats
- 2 generous tablespoons honey
- 140g plain white flour
- 120g sugar
- 1 teaspoon bicarbonate of soda
- 80g desiccated coconut
- 1 tablespoon hot water
- Pre-heat the oven to 180˚ C/350˚ F/gas 4
METHODS:
- Melt the butter and honey gently. Remove from heat and stir in the rolled oats, flour, su,gar and coconut. Mix the bicarbonate of soda and hot water in a cup and immediately pour into the mixture and stir thoroughly.
- Form into small all and arrange on lightly greased baking trays.
- Bake for approx. 8 minutes until the biscuits are a rich golden brown.
- Remove from the oven and leave on the tray for about 5 minutes.
- Remove with a pallet knife and place on a cooling tray.
