Honey Cookie Recipe
100g butter 80g rolled oats
2 generous tablespoons honey 140g plain white flour
120g sugar 1 teaspoon bicarbonate of soda
80g desiccated coconut 1 tablespoon hot water
Pre-heat the oven to 180˚ C/350˚ F/gas 4
Melt the butter and honey gently. Remove from heat and stir in the rolled oats, flour, sugar and coconut. Mix the bicarbonate of soda and hot water in a cup and immediately pour into the mixture and stir thoroughly.
Form into small balls and arrange on lightly greased baking trays .
Bake for approx. 8 minutes until the biscuits are a rich golden brown.
Remove from the oven and leave on the tray for about 5 minutes . Remove with a pallet knife and place on a cooling tray.
